Our History

The olive oil mill “Giannouhidis” is a family business based on tradition and consistency that was founded in 1997 and until today has managed to establish itself as one of the leading olive oil production units in the region of Serres.

We are a Certified Organic Cold Pressed Organic Oil Mill

and our vision is to become a pioneer in the olive oil sector by combining ecology, sustainability and innovation, while respecting nature, tradition and our society.

Production process

The Giannoujidis mill is a modern, continuously operating unit. We aim to ensure that each batch is processed individually. This is done with the sole aim of satisfying our customers who want to be sure that they will receive the olive oil of their own production at home.

Olive harvest

The first step in the olive oil production process is the harvesting of the olives. Once your production reaches the mill from there our role begins.

Cleaning - Washing

The Pieralisi hydro-pneumatic olive washer guarantees total removal of the soil deposited on the fruit, as well as leaves and other foreign bodies. Water consumption is minimal, since the water, when recirculated in the system through a filter, removes foreign bodies, thus constantly guaranteeing the circulation of clean water in the washing machine's tank.

Breakage

The Pieralisi double-mesh crusher allows you to produce a sweeter oil. These crushers are suitable for processing varieties with a high polyphenol content. The crusher reduces the extraction of these ensuring an excellent level of efficiency but lower than the single-mesh crusher and a lower hourly processed quantity.

Kneading

The Molinova TG massage system is equipped with independent stainless steel massage units, and double walls for hot water circulation.

Separation

After kneading, the olive paste is ready for the separation phase. At this stage it is transferred to the centrifuge where the sap is separated from the kernel.

Clearance

The Pieralisi Marte filter with the new Mister Cip system allows the olive oil to be always clean and free of olive residues during the whole olive season and without the addition of water, which means zero production of liquid waste.
